Washed pink bourbon by Didier Javier Pajoy

It is a true privilege to share coffee produced by the Mártir group for a sixth season and this lot is particularly special for two reasons. Firstly, it was produced by our friend Didier Javier Pajoy, leader of our long-term partners Mártir. Secondly, we are releasing this coffee in celebration of our sixth birthday!

Relationship

Each year, our partners in Colombia, Osito Coffee, host the Copa de Oro, a cup competition celebrating their producer partners all around Huila. Over the course of the week the international panel of judges scored coffees from 60 producers across three categories: central Huila, western Huila and southern Huila. This particular lot by Didier was the third highest scoring coffee from western Huila. As well as producing exquisite micro lots, Didier is also the leader of the Mártir group from whom we aim to buy all of our Colombian coffee, so it feels extra special to be able to offer this competition lot and demonstrate our commitment to going deeper rather than wider into our sourcing relationships.

Our relationship with the Mártir group stretches all the way back to our earliest days and we’re proud to have increased the volumes purchased from them each year as our business has grown. As part of our strategy to delve deeper into our sourcing relationships rather than wider, this year we have selected eight lots in total from the Mártir group that we’re looking forward to sharing throughout the year. The impeccable quality and consistency of these coffees each season is a credit to the organisation and dedication of the group members, and we feel privileged to be able to showcase them every year.

About this coffee

Màrtir was founded in 2019 by Didier Javier Pajoy Ico. All of the producer members are either farming organically or are in transition to organic practices, and Didier has spent a significant amount of time teaching producers how to make organic fertilisers and advising on how to best deal with waste water from washing coffee. For Màrtir, the goal is always to produce the highest quality coffee in a manner which has the lowest impact on the environment.

Clean, complex and juicy, this competition lot is an elevated example of pink bourbon found in the region. We’re enjoying sweet stone fruits and juicy citrus in the cup.
