Having previously focused our sourcing with Fernando on his farm Las Laderas, this year we have also selected coffee from another of his farms, Santa Elena, for the first time. Located on the slopes of Santa Ana volcano, Santa Elena benefits from rich volcanic soil and some of the highest altitude in El Salvador. In 2006, following the eruption of Santa Ana, Fernando took the opportunity to stop the use of pesticides and fertilisers, to replant shade trees with native species and to renew older coffee trees. Fernando’s careful processing has resulted in a clean, balanced natural coffee, with ripe, fruity sweetness and comforting milk chocolate.
