1. Tell us a little about Lagom.
We like to think of Lagom as a bit of an IYKYK bakery, hidden away on a little industrial park in Burscough, West Lancs. We are guided by the seasons and place a heavy emphasis on sustainability, sourcing the highest quality ingredients available locally and choosing to work with suppliers whose ethics and values align with ours. You’ll find our counter full of pastries, sausage rolls, cakes, sourdough bread, sandwiches and baguettes, with our turquoise Gaggia tucked into the corner.
2. What is your most memorable coffee experience?
We often go away camping; nothing special, just a van, a tent, and pitching up roadside. A memory that sticks with us most is one where we’ve awoken lakeside, next to Coniston, and clambered down the bank to the stoney beach below. We then performed the ritual of boiling lake water, hand-grinding coffee beans, and taking a peaceful few minutes to brew a delicious V60 in the morning mist.
3. What does your morning coffee routine look like?
Once the ovens and mixers are up and running, one of us peels off from production to whip up an oat flat white on our vintage lever Gaggia. We’re both sippers so we always share our coffees throughout the day so they don’t get cold. That way, when we have four, we’ve actually only had two. Life hack.
