Sookoo Coffee was founded by Ture Waji and his brother, Assefa. Located in Odo Shakiso within the Oromia region and the Guji zone, Sookoo produce coffees with cherry sourced from smallholder farmers located in the surrounding kebeles – in this case, Bookkisa.
Ture Waji is well known for his precise processing which results in some of the cleanest and most consistent coffees that we taste each year. Our focus in Ethiopia since 2021 has been exclusively on working with his coffees with the aim of deepening our relationship and building a long term, mutually-beneficial partnership. Earlier in 2025, we visited Ethiopia for the first time and had the great privilege of spending time with Ture, touring the washing station and visiting some of the smallholder farmers that contribute to this lot.
This lot is made up of two varieties, Gibirinna 74110 and Serto 74112, both of which originate from the Metu Bishari forest, selected by the Jimma Agricultural Research Centre in 1974 for their resistance to Coffee Berry Disease. After delivery to Sookoo’s centralised location, the cherries were pulped before being soaked in water for 12 hours and finally removed to dry on raised beds. Sookoo’s attention to detail in processing make these some of the most dynamic, expressive and transparent coffees that we have the pleasure of working with each year.
